“water of the mountains, sake of the skies”: suginomori brewery begins brewing ‘narai,’ a new Japanese sake brand
Suginomori Shuzo was a sake brewery in the historic town of Narai-juku, Nagano, an Important Preservation District for Groups of Traditional Buildings, established in 1793 but that had closed its doors in 2012. Kiraku, Inc. has restored this brewery into suginomori brewery, and has begun brewing its new Japanese sake brand ‘narai.’ Pre-orders for the first batch of narai are now available.
The suginomori brewery team consists of Chief Executive Officer Kou Sundberg; Master Brewer Masayuki Irie, who worked as brewer at Matsumoto Sake Brewery in Kyoto; and Banto (Head Clerk) Masaki Nishikawa, who served as head clerk at Matsumoto Sake Brewery. Matsumoto Hidehiko, former master brewer at Matsumoto Sake Brewery, serves as advisor. While inheriting the traditions of Suginomori Shuzo, suginomori brewery will take on the challenge of a new style of sake brewing through microbrewery and shiki jozo (year-round brewing) production. narai is a new sake that that expresses the beauty of the local nature of Nagano.
